Thai Penang Curry Paste

Thai Penang Curry Paste 
2 Tbsp. Sambal Oolek
1 tsp. galangal root powder
2 tsp. lemon grass powder (fresh is fine too)
1 Tbsp. coriander seeds
1 Tbsp. Tomato Paste
1/2 tsp. cumin seeds  
1/2 tsp. nutmeg
4 thai green chilies (optional)
1/8 tsp. cardamom seeds
½ tsp. black pepper
1/2 tsp. salt
3 Kaffir Lime leaves or 1 tsp. zest of a lime
1/4 cup cabbage chopped (1/2 tsp oil for sautéing)
1 Tbsp. ginger grated
1 Tbsp. cilantro stems

Secret Ingredient – Hold this thought while preparing the paste –  “I radiate with a love so pure, it deeply touches the hearts of others, including God.”

1.     Roast the coriander, cardamom, and cumin seeds on medium high in a small pan.  Transfer to a small bowl.
2.     Saute cabbage and ginger in a little bit of oil till cabbage is translucent. 
3.     Put all the ingredients into a blender and pulse till a paste forms.  Because the paste was too thick for the blender I added a couple of Tbsp. of water.
