Plantain Patties
Ingredients
2 green plantains
6 green chilies
¼ cup fresh mint
½ cup fresh cilantro
2 teaspoons salt
2 teaspoons coriander powder
1 tablespoon fresh grated ginger
1 cup cabbage coarsely chopped
1/3 cup chick pea flour
2 tablespoons of oil

Method
1.  Cut and peel the skin of the plantains.  Boil the peeled plantains in water with 1 tsp. salt for about 15 minutes.  When you insert a fork it should go through without effort that is how we know they are done.  Transfer the cooked plantains to a small bowl.
2. In a flat non-stick pan roast the chick pea flour on medium heat with the coriander powder for about 5 minutes.  You will know it is roasted when it starts giving out a good aroma and also the flour is easy to toss around with the spoon.  Transfer the roasted flour to a small bowl.
3. In the same pan. Sauté cabbage in 2 teaspoons oil till translucent

Transfer the cabbage, the cooked plantain, the mint, the coriander and the chick pea flour to a food processor.  Add the ginger and salt and pulse till the dough is completely blended.  It should a little sticky to the touch.  If not sticky then add 2 tablespoons of water and pulse for couple of minutes. 5. Heat the flat pan again on medium high, grease your palm and form patties.  
6. Put in about 2 teaspoons of oil for each batch of patties.  Cook on each side for about 4-5 minutes.
Makes about 13 small patties.
