Oatmeal Cookies

hese are old fashioned oatmeal cookies – Soft, chewy, and flavorful!

Ingredients
3 cups oats
1 cup AP Flour
½ teaspoon salt
½ teaspoon baking soda
¾ cup refined coconut oil
½ teaspoon cinnamon
½ cup brown sugar
½ cup regular sugar
¼ cup apple sauce
1 teaspoon vanilla extract
½ cup sliced almonds (optional)

Method
Preheat oven to 375F
Beat sugars and wet ingredients and cinnamon together.
Add the flour, salt, and baking soda and mix well.
Then add oat to the mixture and stir until well combined.
Then add almonds and fold.
Take an ice cream scoop (2 ½ tablespoon scoop) and scoop out the dough.
Form balls, flatten and bake on parchment or any kind of non-stick surface on a half sheet pan.
For 10 minutes only. Do not overbake. 10 minutes is plenty for these cookies.
Makes about 24 cookies

Secrets to making an insanely delicious oatmeal cookie:
I’m not using raisins because they make the cookie too sweet.
Do not over bake.
Flatten the cookie before placing on the baking pan.
Refined coconut oil takes this cookie to another level. But, if you do not have refined coconut oil, then use regular neutral flavored cooking oil.
You have to use old fashioned oats. Do NOT use quick oats. It makes the cookie dry and cakey.
