Here we present to you the mighty karela or bitter guard. For those folk who don’t like this vegetable because they think it is too bitter, this recipe will definitely convert them to a karela loving aficionado.
250 grams ½ lb. karela
2 stalks curry leaves
4 green chilies
2 tablespoon oil
1 teaspoon cumin seeds
½ teaspoon mustard seeds
2 teaspoons coriander powder
¼ teaspoon turmeric
1 tablespoon ginger
2 tablespoons jaggery
½ teaspoon strong tamarind paste
Process karela, chilies and curry leaves
In hot pan over medium heat pour oil, hing, mustard, and cumin.
Then add coriander and karela mixture. Add ginger and turmeric.
Stir till well combined.
Add jaggery, tamarind paste, and salt and mix well.
Cook for 5-7 minutes and medium-low flame till cooked. Do not overcook.
Don’t underestimate the deliciousness of this recipe just because of its simplicity.
