Impossibly Easy Vegetable Pie – Gluten Free Vegetable Pie

Ingredients
½ cup soy curls or soy chunks or tofu
1 cup broccoli
1 cup cauliflower
½ cup cabbage
¼ cup parsley or fresh coriander
1 cup sweet potato
1/3 cup chopped walnuts or almonds (optional)

½ cup vegan cheddar

½ cup millet flour or quinoa flour or oat flour
1 teaspoon baking powder
½ teaspoon baking soda
1 cup plant milk (I use pea protein milk)
½ teaspoon salt
Pepper to taste
Chili powder to taste
1 teaspoon mustard
1 tablespoon oil

Method
1. Preheat oven to 400F. OIl 9 inch square pan.
2. Layer veggies in the pan
3. In a bowl, whisk remaining ingredients except cheese.
4. Pour over the veggies in the pan
5. Bake for 35 minutes until knife in center comes out clean.
6. Sprinkle with cheese when hot, let stand 5 minutes and serve.
