Granola

Let’s celebrate the season with easy peasy and healthy granola. This leaves the house smelling so amazing that you want to make it just for the aroma!

Ingredients
4 cups rolled oats
3/4 cup pumpkin seeds or sliced almonds
1 cup pecans chopped
1 cup coconut flakes
1/2 cup maple syrup or brown sugar or combination
1/4 cup vegetable oil
1/2 teaspoon salt
1/3 cup goji berries or raisins
1/2 teaspoon pumpkin spice or cinnamon
1 teaspoon vanilla extract

Method
Preheat oven to 250 degrees F.
In a large bowl, combine maple syrup, vanilla, pumpkin spice, oil, and salt.
Now add the oats, nuts, and coconut and mix till both mixtures get completely combined.
Cook for 1 hour and 15 minutes, stirring once at around the 45 minute mark to achieve an even color.
Remove from oven and add goji berries and mix until evenly distributed.

Secrets to a good granola:
The trick to a good granola is you bake it at a low temperature for at least 1 hour 15 minutes. This is key to getting that perfect store bought granola look.
Half way through baking you might need to stir the granola around so it gets evenly done. I didn’t have to but depending on your oven you might need to do this.

Granola for a Crowd
(This makes 12 lbs. of granola)
5 lbs oats (24 cups)
6 cups coconut flakes (28 oz shredded coconut sweetened – 2 packs of baker’s)
6 cups pecan chopped
1 tablespoon cinnamon
16 ounces flaxseed
3 cups raisins
6 cups sliced almonds
2 cups brown sugar
2 cups maple syrup
2 Tablespoons vanilla extract
1 tablespoons salt
1 ½ cups oil
