Carrot Halva

Ingredients
3 cups of grated carrots
1/4 cup coconut oil
1 tsp. cardamom powder
1 cup soy or almond milk
1/2 cup almond meal (just pulse almonds in a blender till fine meal forms)
3/4 cup sugar
1/4 cup raisins
1/4 cup chopped almonds roasted
1/4 cup chopped cashew nuts roasted
2-3 tablespoons unsalted pistachio nuts, chopped (optional)

Instructions
1. Grate the carrots coarsely. Heat the oil in a non-stick skillet or saucepan. Add the grated carrots to the pan and fry for about 3 minutes.
2. Add the milk and bring it to a boil. Boil, stirring constantly, for 5 minutes. Then turn the heat down to medium and cook the halva for about 5 minutes. Add almond meal and continue cooking for 2 to 3 minutes. add raisins,
3. Add the sugar, almonds, cardamom powder, and cashews and stir. Cook, stirring frequently until the halva is thick and glossy about 5 to 10 minutes.
4. Remove halva from heat and press down in an 9 by 9 inch pan. Sprinkle with pistachios. Let cool for 5 minutes. Cut and serve.
