Avocado Mayo

• 1 small or medium Haas avocado, cut in half, pit removed, and flesh scooped out (about ½ to 2/3 cup pulp)
• 1 tablespoon lemon or lime juice
• 2 teaspoons mustard
• ¼ teaspoon sea salt (adjust to taste)
• ¼ cup light olive oil or avocado oil
• ¼ tsp. paprika
• 1 tablespoon vinegar (or to taste)

Put everything in a tall bowl. Blend with an immersion blender till well mixed.

    1. Self Life: Without refrigeration two days. With refrigeration about 2 weeks. It won’t last that long though. Everyone who tastes it will come back for seconds and thirds and fourths . . .
